"process" should probably be "processed". It's not a compliment to the restaurant. Processed cheese is considered to be extremely horrible. It's like restasurants that microwave bacon.

It should be "processed" but it is, in fact, often referred to as "pasteurized process cheese product".

If you are curious as to what exactly a pasteurized processed cheese product IS, think of American cheese (commonly found on cheeseburgers), Velveeta, or Cheez Whiz. Basically these are derived from real cheese that has been chopped up and mixed with oil and water (processed) to form a bland, smoothly-melting substance not unlike cheese, yet not as tasty. At least, not in solid form. However, real cheese sometimes has the disadvantage of not melting uniformly, or separating out into grainy bits and oil. So it's a compromise.
