why it is 'Die Bremer Stadtmusikanten' instead of 'Die Bremer Stadt musikanten' in german?

Because compound nouns are written together in one piece in German, it's a rule.

This is also the case in Dutch and the Nordic language. in Norwegian there is today an English-inspired trends towards writing compound nouns detached, something which often changes the meaning of the word:
Pultost (or pult-ost) = A kind of soft cheese
Pult ost = fucked cheese
