"Shoot" works when it's an exclamation, but not when it actually refers to excrement. "Crap" works in either case.

It isn't derived from "shit", but it's used in exactly the same ways. There isn't a common word derived from "shit" that will fit as neatly.

Crap is not a euphemism because it is a profanity. A euphemism for "shit" is a word that replaces it but is inoffensive.

"Crap" is much less offensive than "shit", and nobody I know considers a profanity. Parents might not like their kids saying it at a young age, but it's not a swear word by most definitions. It's certainly a milder word than, say, "damn", which is pretty mild to begin with.
