what of

Do many people still use "what of" constructions?

EGs

What of your mother? Is she well now?
What of your new job? Are you finding it hard going?

And is "what of I" grammatically correct, or is it "what of me"?

I don't use it very often. More often I'd say

"How's your new job?"

"How's your mother?"

etc.

I pretty much never use it. Maybe once in a blue moon.

It would be "what of me". Prepositions are always followed by the objective case.

Is "what of me" idiomatic English?

I don't think so. "What of me" sounds a bit strange, but admittedly better than "what of I". Maybe they use it more in the UK or Oz?
