New Zealand diphthongs

How would a New Zealander pronounce the first vowel in "Sarah"? It sounds like a diphthong, but I'm not sure which one. I've been transcribing [sEIr@]. Any comments on whether that is right or wrong? In this case, I'm looking for a narrow transcription, not a phonemic transcription ... one that shows the distinctive pronunciation of this vowel.

[ser@]. As a monophthong that rhymes with the first vowel in "baring" and "pairing" and "sense" and "cents". You can listen to these here...
