Muay thai is a type of martial art, so they are playing off of "kick your ass" but being specific as to how they would do it.

You shouldn't have a comma between "which is" and "defeated". It completely changes the meaning of the sentence.

I don't think they mean to cause injury using Muay Thai specifically; it's just said figuratively when victorious in competition.

I don't always type in grammatically correct or properly punctated senteces. Sometimes, as I do in my novels sometimes, I'll add an extra comment to emphasis a pause, not any for grammatical purpose. Sometimes I'll use elipses.
