How does one say the word "Argüir" is it "Arg-u-ir" or "Arg-wir"?

there are 3 syllables in this word since the letter 'u' is pronounced and goes after 'g'. They are: Ar-gu-ir. Then you pronounce 'gu' the same way you pronounce 'gu' in gusto.

it's totally wrong. UI, this is a diphthong, thus, it must be pronounced in two syllables: ar-gwir

when there are umlauts over the u, the diphthong does not exist. If you pronounce it that way, them you are using a regionalism and not an established rule.
