Can I use "I hope other people would chime in" to mean "I hope other people would give us their thoughts"?

Would it sound impolite? Because chime in could also mean "to interrupt the speech of others, especially with an unwanted opinion'.

Yes, you can, and no, it would not be impolite. Context is everything.
